Yummy Cauliflower Tacos
/So, you find yourself on taco Tuesday wanting that yummy Mexican feast but also wanting to keep it light... Look no further than these yummy veggie filled tacos! All you need is some purple cauliflower, zucchini and onions for the filling. I used almond flour tortillas (which taste AMAZING with these tacos!), but you could use whatever tortillas are your favorite. Top with a little cotija cheese and hot sauce or salsa if you're feeling spicy!
1/2 head of purple cauliflower
1 zucchini
1 small onion
Coconut oil
Almond flour tortillas (I use Siete)
Cotija Cheese
Salt & Pepper
Salas, hot sauce or whatever toppings you like!
Start by chopping up the veggies into fairly small pieces (you want them to fit in your tortillas nicely). Then in a sauté pan with a little coconut oil cook the veggies till they start to brown and become soft. I sauté the cauliflower and onion first then add the zucchini towards the end so it doesn't become too squishy. Add salt and pepper to taste. After the veggies are cooked I transfer them out to a serving dish and warm up the tortillas on either side in the same pan (no one needs extra pans to wash!). While the tortillas are warming crumble up the cotija cheese for topping the tacos with later. When the tortillas have been warmed up you can start assembling your tacos!
Stuff each tortilla with the cooked veggies, add some of your crumbed cotija cheese on top and voila! You have yourself a tasty and healthy taco.
